Its that time of year, pancake day is here and Ellis Bridals is here to give you Shrove Tuesday inspired wedding ideas and our favourite recipes that will offer your friends and family something that little bit different for 2016.

Here’s some Pancake Day facts to also wow your guests with and make them believe you really know your stuff!
When is Pancake Day?
Pancake day is always determined by when Easter falls. It is always the day preceding Ash Wednesday (the first day of Lent) and always falls in February or March. This year it is Tuesday 9th February.
Why do we celebrate Pancake Day?
Traditionally pancakes were eaten on this day to use rich, indulgent foods like eggs and milk before the 40 day fasting season of Lent began. Some believe however it derives from paganism and that eating warm, round pancakes symbolised the sun – celebrating the arrival of spring.
I think my Pancake stack is pretty tall, but what was the highest ever?
The largest stack of pancakes ever cooked was made up of 60 pancakes and was 91.2cm (2ft 11in) tall!
Nothing beats a classic pancake but we thought we would suggest a couple of recipes we think give the humble milk, eggs and flour mix a twist you’ll love!
OUR ELLIS BRIDALS PANCAKE DAY RECIPES
CLASSIC BRITISH BLUEBERRY PANCAKES
Serve hot with simply a dusting of icing sugar and more blueberries (a dollop of creme fraiche is optional
We love this recipe, utterly delicious and you may instinctively want to add cream or maple syrup but the blueberries inside the sweet pancake mix make it perfect as is!
INGREDIENTS (FOR AROUND 8 LARGE PANCAKES)
250g self raising flour
3 teaspoons baking powder
2 tablespoons sugar
2 eggs
600 ml milk
Pack of blueberries
HOW TO
Sieve the flour into a bowl with the sugar and baking powder, crack in the eggs and add the milk bit by bit, whisking or beating as you go until you have a smooth mix that is neither too thick or too runny. You should be able to ladle it easily into the pan and circle the pan around until it swims out to the edges and forms a good large round. Again when bubbles start to appear, flip and repeat until you have enough to stack up. Carefully add the milk as the quantity of blueberries you use in the mix will vary the amount of milk you will need. Just keep adding until you have a workable batter. Then toss in enough blueberries to pepper the batter. You don’t want too many as the pancake won’t cook and the juice will ooze everywhere but you need enough to add to the taste.

HELMSLEY & HELMSLEY DUTCH APPLE PANCAKE RECIPE
We love these girls very non-fuss and low effort recipe! A great idea if you want to wake up to a sweet breakfast or you can serve with full fat cream or crème fraiche for a very cosy desert. Use fresh berries to really complete the dish. Its also gluten free!
INGREDIENTS (FOR AROUND 4-6 LARGE PANCAKES)
50g + 15g butter
4 medium British grown apples
1 tsp + 1 tsp cinnamon
5 medium eggs
3 tbsp coconut flour
4 tbsp maple syrup
½ tsp baking soda
¼ tsp sea salt
½ tbs vanilla extract
¼ tsp nutmeg
¼ cup water
HOW TO
Preheat your oven to 200°C. Heat 15g of butter in an ovenproof 9 inch frying pan/skillet. Cut the apples length ways, first into quarters and then into thirds, removing the core if you like. Fry the apples with 15g of butter and 1tsp of cinnamon on a medium heat for 10-15 min, stirring occasionally and allowing the edges to brown. Gently melt the 50g of butter in a saucepan and put to one side to cool. Whisk the eggs in a bowl. Add the rest of the ingredients one at a time including the melted butter, while continuing to whisk. Remove the apples from the pan and pour in the pancake mixture, then arrange the apples on top – sprinkling with a little coconut palm sugar. Or just pour the pancake mixture straight onto the apples. Bake in the oven for 20 min or until golden brown on top. Finish with a drizzle of raw honey and some yoghurt or cream
